2 teaspoons of sugar
1 teaspoon of active dry yeast
2 ¼ cup of gluten-free flour safe for baking
⅓ cup of almond flour
3 tablespoons of flaxseed meal
1 tablespoon to 1 ¾ teaspoon of kosher salt or 1 teaspoon of table salt
1 ½ teaspoons of baking powder
¼ cup olive oil, plus extra
1 tablespoon plus 1 ½ teaspoon of apple cider vinegar
Your choice of toppings (including tomato sauce, cheese, and additional toppings)
Combine sugar and 1 ⅓ cups of warm water in a small container. Sprinkle yeast across the top and let sit until yeast is foamy.
Combine all dry ingredients until they are evenly mixed a medium to large bowl. Slowly mix in the yeast mixture, oil, and vinegar until thick but liquid batter forms. This usually takes 2 to 5 minutes using a whisk or wooden spoon but a hand mixer may be used.
Let dough sit, covered in plastic wrap, in a warm place until bubbles have formed throughout the dough. This takes about 6o to 90 minutes.
Preheat oven to 325 degrees and separate dough into two baking trays (nonstick or lined with silpat). A nonstick skillet is also a good option but make sure to use large amounts of oil to make sure the dough does not stick. Spread dough until it is about a ¼ of an inch thick.
Cover dough with plastic wrap and let it rest for 20 to 30 minutes.
Bake dough for about 30 to 40 minutes until the crust is lightly browned. Make sure to rotate the tray at least once during the baking process.
Take crust out of the oven and add any toppings you want to the crust. Vegan cheese may be used to make this gluten and vegan free recipe. Adjust temperature of oven to 425 degrees and bake pizza for about 10-12 minutes.
